Chinese Jalapeno Chicken (Buffet Style)
Ingredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 onion, sliced
1 bell pepper, sliced
4-6 jalapeños, sliced (adjust to taste)
3 cloves garlic, minced
1 tablespoon ginger, minced
1/4 cup chicken broth
2 tablespoons hoisin sauce
1 tablespoon sesame oil
Salt and pepper to taste
Green onions, chopped for garnish
Directions:
In a bowl, combine the chicken pieces with soy sauce and cornstarch. Let it marinate for about 15 minutes.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced onion, bell pepper, and jalapeños. Stir-fry for about 3-4 minutes until they begin to soften.
Add the minced garlic and ginger to the skillet, cooking for an additional minute until fragrant.
Return the cooked chicken to the skillet. Pour in the chicken broth and hoisin sauce, stirring to combine. Allow the mixture to simmer for a few minutes until heated through.
Drizzle with sesame oil and season with salt and pepper to taste.
Garnish with chopped green onions before serving.
