Ingredients 🍲:
2 boneless, skinless chicken breasts 🍗
8 oz fettuccine pasta 🍝
1 tablespoon olive oil 🛢️
2 cloves garlic, minced 🧄
1 cup heavy cream 🥛
1/2 cup chicken broth 🍗
1/2 cup grated Parmesan cheese 🧀
1 teaspoon Italian seasoning 🌿
Salt and pepper to taste 🧂
Fresh parsley for garnish 🌿
Directions 🍽️:
Cook the Pasta:
Cook the fettuccine pasta according to the package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.
Prepare the Chicken:
Season the chicken breasts with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-7 minutes per side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside. Once cooled slightly, cut into bite-sized cubes.
Make the Creamy Sauce:
In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and cook for 3-4 minutes, allowing the sauce to thicken slightly.
Add Parmesan cheese and stir until it melts into the sauce.
Combine:
Add the cooked fettuccine pasta to the skillet, tossing to coat in the creamy sauce. If needed, add some reserved pasta water to reach the desired consistency.
Stir in the cooked chicken pieces and cook for an additional 2 minutes to heat through.
Serve:
Serve the creamy chicken fettuccine in bowls, garnished with freshly chopped parsley.
