Today felt like the perfect day for something cozy yet easy to share, so I put together these adorable mini Shepherd’s Pies. They’re like comfort in every bite-sized serving!
Ingredients:
– 1 lb ground beef or lamb
– 1 cup frozen peas and carrots
– 1 small onion, diced
– 1 cup beef broth
– 2 tbsp tomato paste
– 1 tbsp Worcestershire sauce
– 1 tbsp all-purpose flour
– 3 cups mashed potatoes
– Puff pastry sheets (enough to line and cover your pie tins)
– 1 egg, beaten
Instructions:
1. Prepare the filling:
– In a skillet, cook ground beef or lamb until browned. Add onions and cook until softened. Stir in flour, tomato paste, Worcestershire sauce, and beef broth. Simmer until thickened. Add peas and carrots, then let cool.
2. Assemble the pies:
– Preheat oven to 375°F (190°C). Line greased pie tins with puff pastry. Spoon the cooled filling into each tin, top with mashed potatoes, and cover with another layer of puff pastry. Seal the edges and cut a small vent on top.
3. Bake to perfection:
– Brush the pies with beaten egg and bake for 20-25 minutes, or until golden brown.
4. Serve and enjoy:
– Let cool slightly before serving warm.
