recipe for Red Velvet Cake:

Ingredients
For the Cake:
2 ½ cups (315g) all-purpose flour
1 ½ cups (300g) granulated sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 cup (240ml) buttermilk
1 ½ cups (360ml) vegetable oil
2 large eggs
1 tsp white vinegar
1 tsp vanilla extract
2 tbsp red food coloring
For the Cream Cheese Frosting:
16 oz (450g) cream cheese, softened
1 cup (230g) unsalted butter, softened
4 cups (500g) powdered sugar
2 tsp vanilla extract

Instructions
For the Cake:
1. Preheat oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch (23cm) round cake pans.
2. Mix dry ingredients: In a medium bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
3. Combine wet ingredients: In a large bowl, whisk together the buttermilk, vegetable oil, eggs, vinegar, vanilla, and red food coloring until smooth.
4. Mix the batter: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
5. Bake: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
6. Cool: Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Frosting:
1. Beat cream cheese and butter: In a large bowl, beat the cream cheese and butter together until smooth and creamy.
2. Add sugar and vanilla: Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.

Assemble the Cake:
1. Level layers: If necessary, level the cakes with a knife or cake leveler.
2. Frost: Place one cake layer on a serving plate. Spread a layer of frosting on top. Place the second cake layer on top and frost the entire cake.
3. Decorate: Optionally, sprinkle crumbs from the cake trimmings or red sugar on top for decoration.
