• 4 fish fillets (cod, sea bass, or snapper)
• Salt and freshly ground black pepper, to taste
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 cup cherry tomatoes, halved
• ½ cup black olives, pitted and sliced
• ¼ cup capers, drained
• 1 lemon, thinly sliced
• ¼ cup chopped fresh parsley
• ¼ cup chopped fresh basil
• 1 small red onion, thinly sliced
• Fresh dill (optional, for garnish)
• Red pepper flakes (optional, for a spicy kick)
Instructions:
1. Preheat the Oven:
o Preheat your oven to 375°F (190°C).
2. Prepare the Fish:
o Season the fish fillets with salt and freshly ground black pepper on both sides.
3. Assemble the Dish:
o In a large baking dish, drizzle olive oil and spread the minced garlic evenly.
o Arrange the fish fillets in the dish.
o Scatter the cherry tomatoes, black olives, capers, and red onion around and on top of the fish.
o Add lemon slices on top of the fish for flavor.
o Sprinkle red pepper flakes for heat (if desired).
4. Bake the Fish:
o Drizzle a little extra olive oil over the top.
o Bake uncovered for 15–20 minutes, or until the fish is cooked through (opaque and flakes easily with a fork).
5. Garnish and Serve:
o Remove from the oven and sprinkle with fresh parsley, basil, and dill if using.
o Serve immediately with a side of crusty bread, rice, or a light salad for a wholesome Mediterranean meal.
