Ultimate Surf & Turf with Garlic Butter Scallops and Shrimp

 

Experience a flavor-packed feast with succulent steak, juicy shrimp, and tender scallops topped with rich garlic butter! Perfect for any special occasion!

Ingredients:
– 200g scallops, cleaned and dried
– 200g shrimp, peeled and deveined
– 2 ribeye steaks halal
– 1 tbsp olive oil (for both steak and potatoes)
– 1/2 tsp salt (for seasoning)
– 1/2 tsp black pepper (for seasoning)
– 1 tsp fresh thyme leaves
– 3 garlic cloves, minced
– 1/2 tsp smoked paprika
– 1 tbsp fresh parsley, chopped
– 300g baby potatoes, boiled and halved
– 1/2 tsp garlic powder
– 1/2 cup mayonnaise
– 1 tsp lemon juice

Instructions:

1. Start by preparing the steaks. Rub both sides of the ribeye steaks with 1 tbsp of olive oil, and season with 1/2 tsp of salt, 1/2 tsp of black pepper, and fresh thyme leaves. Set them aside and allow the flavors to meld.

2. Cook the steaks next. Heat a grill pan or a skillet over medium-high heat. Sear the steaks for about 3-5 minutes on each side, depending on how you like your steak cooked. Just before your desired doneness is reached, sprinkle fresh thyme over the steaks for a fragrant finish. Once cooked, let the steaks rest on a plate for at least 5 minutes.

3. While the steaks are resting, prepare the scallops and shrimp. In the same pan, lower the heat to medium and add 2 tbsp of butter. Once melted, add the minced garlic and sauté until fragrant, about 30 seconds.

4. Season the scallops and shrimp with 1/2 tsp of smoked paprika, then add them to the pan. Cook the scallops for around 2 minutes on each side until they’re golden brown. Cook the shrimp for about 2-3 minutes until they are pink and opaque. Once done, remove them from the heat and sprinkle with freshly chopped parsley.

5. Now, let’s give the potatoes some extra flavor. Toss the boiled baby potatoes with 1 tbsp of olive oil, garlic powder, salt, and pepper to taste. You can either grill the potatoes or sauté them in the pan for about 3-4 minutes until they turn golden and crispy on the outside.

6. While the potatoes are cooking, whip up a quick garlic aioli. In a small bowl, mix together 1/2 cup of mayonnaise, 1 finely minced garlic clove, 1 tsp of lemon juice, and 1/4 tsp of black pepper until smooth and well combined.

7. Finally, it’s time to plate your meal! Arrange the juicy steak on a plate, and add the garlic butter scallops and shrimp next to it. Serve with crispy potatoes on the side and a generous dollop of garlic aioli for dipping.
