Jalapeno Cheese Bites 

**Ingredients:**
– 9 large lightly beaten eggs
– 1 tablespoon butter for greasing the baking dish
– 2 cups shredded sharp Cheddar Cheese
– 2 cups shredded Monterey Jack cheese
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1 cup chopped pickled jalapenos, drained
– 1 cup chopped pimentos, drained
**Instructions:**
1. Preheat your oven to 325ºF (163ºC).
2. In a large mixing bowl, shred the Cheddar and Monterey Jack cheeses, and set them aside.
3. In another bowl, lightly beat the eggs, then stir in the garlic powder and salt. Set this mixture aside.
4. Prepare a 13 x 9 baking dish by greasing it with butter.
5. After draining, chop the pickled jalapenos and pimentos, making sure to strain them well.
6. In the prepared baking dish, combine the cheeses, jalapenos, and pimentos.
7. Evenly drizzle the egg mixture over the cheese and pepper blend.
8. Bake uncovered in the preheated oven for 25-35 minutes, or until the center comes out clean when tested with a toothpick and the top feels slightly firm to the touch.
9. Allow the dish to cool slightly before slicing it into bite-sized pieces. Serve and enjoy your cheesy, spicy bites!
