Ingredients:
1.5 pounds baby potatoes, halved
4 slices thick-cut bacon, chopped
3 tablespoons honey
2 tablespoons olive oil
2 teaspoons Dijon mustard
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
In a large mixing bowl, whisk together honey, olive oil, Dijon mustard, smoked paprika, garlic powder, salt, and pepper.
Add the halved potatoes to the bowl and toss until evenly coated.
Spread the potatoes on the prepared baking sheet in a single layer. Sprinkle the chopped bacon evenly over the potatoes.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are tender and golden, and the bacon is crispy.
Remove from the oven and garnish with fresh parsley before serving.
