BBQ Meatloaf is a delicious twist on the classic meatloaf, combining the savory flavors of Korean BBQ with a perfect balance of sweet and spicy. Here’s a simple recipe to make this tasty dish:
Ingredients:
For the Meatloaf:
1 lb ground beef (or a mix of beef and pork for extra flavor)
1/2 cup breadcrumbs (preferably panko for a lighter texture)
1/4 cup milk
1/2 small onion, finely chopped
2 cloves garlic, minced
1 egg
1 tbsp soy sauce
1 tbsp sesame oil
1/2 tsp ground ginger
1/2 tsp black pepper
1/2 tsp salt
For the Sweet & Spicy Korean BBQ Glaze:
1/4 cup gochujang (Korean chili paste)
2 tbsp soy sauce
2 tbsp honey (or brown sugar for a richer sweetness)
1 tbsp rice vinegar
1 tbsp sesame oil
1 clove garlic, minced
1/2 tsp ground ginger
1 tsp sesame seeds (for garnish)
2-3 green onions, chopped (for garnish)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meatloaf:
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, onion, garlic, egg, soy sauce, sesame oil, ginger, black pepper, and salt.
Mix everything together until well combined. Avoid overmixing to keep the meatloaf tender.
Shape the Meatloaf:
Transfer the meat mixture to a greased loaf pan (or shape it into a freeform loaf on a baking sheet).
Press the mixture evenly into the pan to ensure even cooking.
Make the Sweet & Spicy Korean BBQ Glaze:
In a small saucepan, combine the gochujang, soy sauce, honey (or brown sugar), rice vinegar, sesame oil, garlic, and ginger.
Bring to a simmer over medium heat, stirring occasionally. Let the sauce cook for about 2-3 minutes until it thickens slightly. Taste and adjust sweetness or spice by adding more honey or gochujang if desired.
Glaze the Meatloaf:
Spoon some of the glaze over the top of the meatloaf to cover it completely.
Reserve some of the glaze for serving.
Bake the Meatloaf:
Place the meatloaf in the preheated oven and bake for about 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Halfway through baking, you can add more glaze on top for an extra layer of flavor.
Garnish and Serve:
Once the meatloaf is cooked, remove it from the oven and let it rest for 10 minutes.
Slice the meatloaf and drizzle with the reserved glaze. Sprinkle sesame seeds and chopped green onions on top for added flavor and crunch.
Serve With:
Steamed rice, stir-fried vegetables, or a fresh Korean-style salad would pair perfectly with this Sweet & Spicy Korean BBQ Meatloaf
