I love this soup. So Creamy and comforting, perfect for chilly weather!
Soup Base:
4 cups chicken broth
1 cup milk
4 medium potatoes cubes
1 cup carrots cubes
3 ribs celery diced
4 cloves garlic
1 onion diced
1/4 cup flour
2 tablespoons butter
2 teaspoons Italian Seasonings
Chicken Marinade:
2 chicken breast-sliced
2 tablespoons oil
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon salt and pepper
In a bowl, season the chicken with Italian seasoning, garlic, black pepper and salt. Marinade for at least 30 minutes while you prepare the other vegetables.
After 30 minutes, heat the pan, add oil and pan sear the chicken. Cook for about 3-4 minutes till a little brown. Remove and set aside.
In a pot, add butter. Saute the onions, potatoes, celery and carrots. Cook for about 5 minutes. Then, add garlic and saute till fragrant. Sprinkle the flour and mix. Cook until the flour combined with the veggies or not raw anymore.
Add chicken, chicken broth and milk. Bring to boil and simmer for about 15-20 minutes till the chicken and veggies are cook and tender. Check with fork. Add Italian seasonings. Add Salt and pepper to taste if needed. Serve with bread or biscuits. Garnish with fresh parsley. Enjoy!
