Ingredients:
1 lb boneless chicken breast
3 tbsp cooking oil
12 oz uncooked chow mein noodles
2 cups shredded cabbage
1 large carrot, cut into matchsticks
1/2 cup chopped green onions
2 garlic cloves, finely minced
Chow Mein Sauce:
6 tbsp oyster sauce
3 tbsp soy sauce (low-sodium)
3 tbsp light sesame oil
1/2 cup chicken broth
1 tbsp cornstarch
1 tbsp sugar
Directions:
Whisk together the chow mein sauce ingredients in a bowl. Set aside.
Cook the noodles as directed on the package, then rinse with cold water and drain well.
Heat oil in a skillet over medium-high heat. Slice chicken into strips and stir-fry until golden brown. Remove and set aside.
Add cabbage, carrot, and garlic to the skillet. Stir-fry until softened, about 3-4 minutes.
Toss the noodles and chicken back into the skillet. Pour the sauce over and stir-fry for 2-3 minutes to coat evenly.
Garnish with green onions and serve warm.
