Hearty Italian Sausage Tortellini Soup



INGREDIENTS:
– 1 lb Italian sausage
– 1 onion, diced
– 2 cloves garlic, minced
– 4 cups chicken broth
– 1 can diced tomatoes (14.5 oz)
– 1 cup tortellini (fresh or frozen)
– 2 cups spinach
– 1 tsp Italian seasoning
– Salt and pepper to taste
– Parmesan cheese for serving


INSTRUCTIONS:
1. Heat a large pot over medium heat and add the Italian sausage. Cook until browned, then drain any excess fat.
2. Add the diced onion and minced garlic to the pot. Cook until the onion becomes translucent.
3. Pour in the chicken broth and add the diced tomatoes. Bring the mixture to a boil.
4. Stir in the tortellini and Italian seasoning. Reduce the heat and let it simmer for about 5-7 minutes, or until the tortellini is cooked through.
5. Add the spinach to the pot and cook until it wilts.
6. Season the soup with salt and pepper to taste.
7. Serve the soup hot, topped with grated Parmesan cheese.
