Best Carrot Cake Ever
This classic carrot cake is moist, flavorful, and topped with creamy goodness. It’s sure to be a crowd-pleaser!
Ingredients
• 6 cups grated carrots
• 1 cup brown sugar
• 1 cup raisins
• 4 eggs
• 1 1/2 cups white sugar
• 1 cup vegetable oil
• 2 tsp vanilla extract
• 1 cup crushed pineapple (drained)
• 3 cups flour
• 1 1/2 tsp baking soda
• 1 tsp salt
• 4 tsp cinnamon
• 1 cup walnuts
Directions
Mix carrots and brown sugar, let sit for 1 hour, then add raisins.
Preheat oven to 350°F. Grease two 10-inch pans.
Beat eggs, sugar, oil, vanilla, and pineapple together.
Add dry ingredients (flour, baking soda, salt, cinnamon) to wet mixture.
Fold in carrot mixture and walnuts.
Bake for 45-50 minutes or until a toothpick comes out clean.
Cool for 10 mins, then transfer to racks.
Frosting (Optional)
• 1/2 cup butter, softened
• 8 oz cream cheese, softened
• 4 cups powdered sugar
• 2 tsp vanilla extract
Beat butter, cream cheese, and powdered sugar. Add vanilla.
Frost cooled cakes and garnish with walnuts if desired.
