Creamy Parmesan Chicken with Spinach & Mushrooms
Ingredients:
– 4 chicken thighs (boneless, skinless)
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– Salt and pepper to taste
– 2 tablespoons butter
– 3 cloves garlic, minced
– 1 cup mushrooms, sliced
– 2 cups fresh spinach
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1/4 teaspoon red chili flakes (optional)
Directions:
1. Season chicken thighs with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat and sear the chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
2. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant. Add mushrooms and cook for 3-4 minutes until softened.
3. Stir in the heavy cream and Parmesan cheese, letting the sauce simmer until slightly thickened (about 3-4 minutes). Season with salt, pepper, and chili flakes if desired.
4. Add spinach to the sauce and cook for 2 minutes until wilted. Return the chicken thighs to the skillet and coat with the sauce.
5. Serve hot, garnished with extra Parmesan or fresh herbs if desired.
