Ingredients:
– 1 cup pineapple chunks (fresh or canned)
– 2 pounds boneless, skinless chicken thighs

How to make it:
Start by mixing the pineapple chunks, barbecue sauce, soy sauce, brown sugar, garlic powder, ginger, and black pepper in your crockpot. Then, add the chicken thighs, ensuring they are well coated with the sauce.

Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender. Serve with rice or your favorite side dish, and sprinkle with green onions for a fresh touch!

Notes:
– For extra flavor, marinate the chicken in the sauce for a couple of hours before cooking.
– If you like a bit of heat, add some crushed red pepper flakes to the sauce.
