Honey Pepper Chicken Lo Mein & Steamed Rice

Ingredients:
– Chicken breast or thighs
– Onions
– Red bell pepper
– Green bell pepper
– Blue Dragon egg noodles
– Shredded cabbage
– Shredded carrots
– Green onion
– Flour
– Milk
– Teriyaki sauce
– Hoisin sauce
– Soy sauce
– Honey
– Brown sugar
– Seasonings of your choice (Cajun, coarse black pepper, onion powder, garlic powder, seasoned pepper, McCormick rotisserie chicken seasoning)

Instructions:
1. Begin by cleaning, trimming, and cutting your chicken into bite-sized pieces. Season your chicken generously with your choice of spices such as Cajun seasoning, coarse black pepper, onion powder, and garlic powder.
2. Soak the seasoned chicken in milk for about 15 minutes to enhance flavor and tenderness.
3. While the chicken is soaking, prepare your coating by mixing flour with a touch of seasoning in a separate bowl or bag.
4. Remove the chicken from the milk, allowing any excess to drip off, and then coat the pieces thoroughly in the seasoned flour.
5. Heat oil in a large skillet over medium-high heat and fry the coated chicken until golden and crispy. Once done, transfer the chicken to a plate lined with paper towels to drain any excess oil.
6. In the same skillet, add a small amount of oil, then toss in the sliced red and green bell peppers along with diced onions, and slightly sear them until tender.
7. Return the fried chicken to the skillet and pour your sauce mixture (teriyaki sauce, hoisin sauce, soy sauce, honey, and brown sugar) on top. Reduce the heat and let everything simmer together for about 5-7 minutes to meld the flavors.
8. Meanwhile, cook the egg noodles according to package instructions, usually by boiling them for about 3-4 minutes in water. Drain and set aside.
9. In another skillet, heat oil over medium-high heat, and add the cooked noodles along with shredded cabbage, carrots, and chopped green onion.
10. Sprinkle in your choice of seasonings and quickly toss everything with tongs to mix well, adding some of the remaining sauce from the chicken mixture for flavor. Allow to cook for another minute before serving.
11. Serve the honey pepper chicken over a bed of lo mein and enjoy the burst of flavors in every bite!
