Ingredients:
For the Salmon:
4 salmon fillets (about 6 oz each)
Juice and zest of 2 limes
1/2 cup pistachios, finely chopped
Salt and pepper to taste
Fresh parsley or cilantro, chopped (for garnish)
For the Salsa Greens:
4 cups mixed salad greens (such as spinach, arugula, and romaine)
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
1 small jalapeño, finely chopped (optional)
Juice of 1 lime
Salt and pepper to taste
1 avocado, diced (optional)
Instructions:
Prepare the Salmon:
Preheat your oven to 400°F (200°C).
In a small bowl, mix the lime zest, lime juice, and a pinch of salt and pepper.
Place the salmon fillets on a baking sheet lined with parchment paper.
Brush each fillet with the lime mixture, then press the chopped pistachios onto the top of each fillet to form a crust.
Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the pistachio crust is golden.
Prepare the Salsa Greens:
In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and jalapeño (if using).
Drizzle with lime juice and season with salt and pepper. Toss well to combine.
Gently fold in the diced avocado if using just before serving to keep it fresh and green.
Serve:
Plate the cooked pistachio-crusted salmon fillets on top of a generous helping of salsa greens.
Garnish with fresh parsley or cilantro.
Serve immediately and enjoy your zesty and nutty Lime and Pistachio Salmon with Salsa Greens!
