Ingredients:
• 1 lb smoked sausage (sliced)
• 1 small onion (diced)
• 1 cup bell peppers (diced, any color)
• 1 cup uncooked rice
• 1 teaspoon garlic powder
• 1 teaspoon paprika
• Salt & black pepper (to taste)
• 1 (15 oz) can black beans (drained & rinsed)
• 1 cup corn (frozen or canned)
• 2 cups chicken or vegetable broth
• 1/2 cup BBQ sauce (your favorite brand)
• Optional garnish: Chopped green onions or fresh parsley
Instructions:
Brown the Sausage:
• Heat a large skillet over medium heat and cook the sliced sausage until golden brown. Remove and set aside.
Sauté the Veggies:
• In the same pan, add onions and bell peppers. Cook for about 3-4 minutes until softened.
Toast the Rice & Spices:
• Stir in the rice, garlic powder, paprika, salt, and pepper. Let it toast for 1 minute, stirring occasionally.
Add the Good Stuff:
• Pour in the black beans, corn, broth, and BBQ sauce. Stir well to combine.
Simmer to Perfection:
• Bring everything to a gentle boil, then reduce heat to low, cover, and let it simmer for 20 minutes or until the rice is fully cooked and the liquid is absorbed.
Finish & Serve:
• Stir the cooked sausage back into the pan and let it sit for a few minutes to absorb the flavors.
Garnish with green onions or parsley, and serve hot! Enjoy!
