Meatloaf with Mashed Potatoes and Gravy
Ingredients:
– For the Meatloaf:
– 1 lb ground beef
– 1/2 cup breadcrumbs
– 1/4 cup milk
– 1 egg
– 1 small onion, finely chopped
– 1/4 cup ketchup
– Salt and pepper, to taste
– For the Mashed Potatoes:
– 2 lbs potatoes, peeled and cubed
– 1/2 cup milk
– 1/4 cup butter
– Salt and pepper, to taste
– For the Gravy:
– 2 cups beef broth
– 2 tbsp flour
– 2 tbsp butter
Instructions:
1. Make the Meatloaf:
– Preheat oven to 350°F (175°C).
– In a bowl, mix ground beef, breadcrumbs, milk, egg, onion, ketchup, salt, and pepper.
– Shape mixture into a loaf and place in a baking dish.
– Bake for 45-50 minutes or until cooked through.
2. Prepare Mashed Potatoes:
– Boil potatoes until tender, about 15-20 minutes.
– Drain and mash with milk, butter, salt, and pepper.
3. Make the Gravy:
– In a saucepan, melt butter and stir in flour, cooking for 1-2 minutes.
– Gradually whisk in beef broth and simmer until thickened.
4. Serve:
– Slice meatloaf and serve with mashed potatoes topped with gravy.
