Easy Chocolate Chip Cheesecake Stuffed Cookies

Ingredients:

1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup semi-sweet chocolate chips
4 oz cream cheese, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract (for the cheesecake filling)

Directions:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until fully combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the chocolate chips.
In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract for the cheesecake filling until smooth and creamy.
Take a tablespoon of cookie dough and flatten it out in the palm of your hand. Add about 1 teaspoon of the cheesecake filling in the center and top with another tablespoon of cookie dough. Seal the edges around the filling to make a ball.
Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the cookies are golden around the edges.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
