Double Chocolate Cake with Cream Cheese Frosting

Ingredients:

For the Cake:

2 cups all-purpose flour

1 ¾ cups granulated sugar

¾ cup unsweetened cocoa powder

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup whole milk

½ cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

1 cup hot coffee (or hot water)

1 cup chocolate chips (optional)

For the Cream Cheese Frosting:

8 oz (225g) cream cheese, softened

½ cup unsalted butter, softened

3 cups powdered sugar

1 teaspoon vanilla extract

Instructions:

Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

Prepare the batter: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Mix wet ingredients: Add milk, oil, eggs, and vanilla. Mix until well combined.

Add hot coffee: Gradually stir in the hot coffee (batter will be thin). Fold in chocolate chips if using.

Bake: Divide batter evenly between cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.

Cool: Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the frosting: Beat cream cheese and butter together until smooth. Add powdered sugar gradually, then mix in vanilla extract.

Assemble the cake: Spread frosting between cake layers and over the top and sides.

Chill: Refrigerate for at least 30 minutes before serving for the best texture.
