Blueberry Cheesecake
Ingredients:
For the crust:
• 1 ½ cups graham cracker crumbs
• ¼ cup granulated sugar
• ½ cup (1 stick) melted butter
For the cheesecake filling:
• 16 oz (2 blocks) cream cheese, softened
• ¾ cup granulated sugar
• 2 eggs
• 1 teaspoon vanilla extract
• ½ cup sour cream
For the blueberry topping:
• 2 cups fresh or frozen blueberries
• ¼ cup granulated sugar
• 1 tablespoon lemon juice
• 1 teaspoon cornstarch dissolved in 2 tablespoons water
Instructions:
1. Prepare the crust: Mix the graham cracker crumbs, sugar, and melted butter. Press into a baking dish and bake at 350°F for 10 minutes. Let cool.
2. Make the filling: Beat the cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and sour cream.
3. Bake the cheesecake: Pour the filling over the crust and bake at 325°F for 40-45 minutes, until the center is set. Let cool, then refrigerate for at least 4 hours.
4. Make the blueberry topping: Cook blueberries, sugar, and lemon juice over medium heat until juicy. Add the dissolved cornstarch and stir until thickened. Let cool.
5. Assemble and serve: Pour the blueberry topping over the cheesecake before serving.
