Shrimp and Sausage Foil Packet Dinner
Ingredients:
1 pound large shrimp, peeled and deveined
1/2 pound smoked sausage, sliced
2 ears of corn, cut into 4 pieces each
1 pound baby red potatoes, halved or quartered
2 tablespoons olive oil
2 teaspoons Cajun or Creole seasoning
2 cloves garlic, minced
Salt and pepper to taste
Lemon wedges and fresh parsley for garnish
Directions:
Preheat your grill to medium-high heat or your oven to 425°F (220°C).
In a large bowl, combine shrimp, sausage, corn, and potatoes. Drizzle with olive oil and sprinkle with Cajun seasoning, minced garlic, salt, and pepper. Toss to coat everything evenly.
Divide the mixture evenly among four large sheets of aluminum foil. Fold the edges of the foil up around the ingredients to create a sealed packet.
Place the foil packets on the grill and cook for about 10-12 minutes or, if using an oven, bake for 20-25 minutes until shrimp are pink and potatoes are tender.
Carefully open the packets (watch for steam), and serve immediately, garnished with lemon wedges and chopped fresh parsley.
