Vegetarian Lentil Soup

Lentil soup is a comforting staple in many cuisines, known for its rich flavors and heartiness. This vegetarian version balances the earthiness of lentils with aromatic herbs and fresh vegetables, making it a nourishing and flavorful option. 1 onion, chopped
3 garlic cloves, minced
2 stalks celery, finely chopped
1 ½ cups cubed potatoes
2 carrots, peeled and sliced
Pinch of salt
½ cup dry green or brown lentils, rinsed
½ teaspoon thyme
½ teaspoon marjoram
6 cups vegetable stock
⅓ cup shredded cheddar
2 tablespoons sour cream

Directions:
1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Sauté onion, garlic, and celery until soft.
2. Add potatoes, carrots, and salt, stirring for 2 minutes.
3. Pour in lentils, thyme, marjoram, and vegetable broth. Bring to a boil, then simmer for 30 minutes.
4. Remove from heat and let cool for 5 minutes before stirring in cheese.
5. Combine ¼ cup of soup with sour cream and mix it back into the pot. Blend partially for a smoother consistency.
