Triple Chocolate Cheesecake 🍰

Ingredients:
– 20 Oreo cookies 🍪
– 5 tbsp butter, melted 🧈
– ⅓ cup unsweetened cocoa powder 🍫
– 1¾ cups granulated sugar 🍬
– 24 oz cream cheese, room temperature 🧀
– 8 oz bittersweet or semi-sweet chocolate, melted 🍫
– ½ cup heavy cream 🥛
– 1 tsp vanilla extract 🌼
– 4 large eggs 🥚
– 1 cup sour cream 🍶
– ¾ cup milk chocolate chips 🍫
– ½ cup heavy cream 🥛
– 1 cup + 2 tbsp heavy cream, divided 🥛
– ½ cup milk chocolate chips 🍫
– Chocolate curls (optional) 🍫

Instructions:
1. 🔥 Preheat oven to 350°F (175°C). Crush Oreo cookies, mix with melted butter, and press into a 9-inch springform pan. Bake for 8-10 mins. Cool completely.
2. 🍫 In a bowl, whisk cocoa powder and sugar. Add cream cheese, mix until smooth. Gradually add melted chocolate, heavy cream, and vanilla. Mix in eggs one at a time, then fold in sour cream. Pour over crust.
3. ♨️ Place springform pan in a roasting pan filled with hot water. Bake at 325°F (160°C) for 1.5 hours. Cool in the oven for 1 hour, then refrigerate for at least 8 hours.
4. 🍫 Heat milk chocolate chips and heavy cream in intervals until smooth. Spread ganache over cheesecake and let set.
5. 🍦 Whip remaining heavy cream until soft peaks. Fold in cooled chocolate mixture. Pipe over ganache.
6. 🎉 Garnish with chocolate curls if desired. Slice and enjoy!
