Lamb Chops with Mashed Potatoes and Asparagus

Ingredients:

– 4 lamb chops
– 4 medium potatoes, peeled and chopped
– 1/4 cup milk
– 2 tablespoons butter
– Salt and pepper to taste
– 1 bunch of asparagus, trimmed
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– Fresh herbs (like rosemary or thyme) for garnish

Instructions:

1. Start by boiling a large pot of salted water. Once it’s boiling, add the chopped potatoes and cook until tender, about 15-20 minutes.
2. While the potatoes are cooking, heat a skillet over medium-high heat. Add the lamb chops and season them with salt and pepper.
3. Cook the lamb chops for about 4-5 minutes on each side, depending on your preferred level of doneness. Remove them from the skillet and let them rest.
4. In the same skillet, add olive oil and sauté the minced garlic for about 1 minute. Then, add the asparagus and cook until tender, about 5-7 minutes. Season with salt and pepper.
5. Once the potatoes are tender, drain them and mash with milk and butter until smooth. Adjust seasoning with salt and pepper as needed.
6. Plate the mashed potatoes and top with the sautéed asparagus and the rested lamb chops.
7. Garnish with fresh herbs for an extra touch before serving.

Feel free to experiment with different vegetables on the side—broccoli or green beans work beautifully too!
