Grilled Chicken with Veggie Rice
A simple, healthy, and flavorful meal perfect for any day! Ingredients:
For the Grilled Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp paprika
Juice of 1/2 lemon
For the Vegetable Rice:
1 cup cooked white rice (or brown rice)
1/2 cup frozen peas
1/2 cup diced carrots
1/4 cup chopped onions
1 tbsp butter or olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder Step by Step:
Marinate & Grill the Chicken:
Coat the chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
Heat a grill pan over medium heat and cook the chicken for 5-6 minutes per side until golden and fully cooked.
Let rest for a few minutes, then serve. Prepare the Veggie Rice:
In a pan, heat butter or olive oil over medium heat.
Sauté onions, carrots, and peas for 3-4 minutes until tender.
Add cooked rice, garlic powder, salt, and black pepper. Stir well and cook for another 2 minutes. Assemble & Serve:
Plate the grilled chicken alongside the vegetable rice.
Garnish with fresh herbs or an extra squeeze of lemon if desired. Prep Time: 10 minutes |
