Swirled Blackberry Lavender Sheet Cake
Ingredients
For the Cake:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsalted butter (softened)
1 cup milk
3 large eggs
2 tsp baking powder
1 tsp vanilla extract
1 tbsp culinary lavender (dried)
1/4 tsp salt
For the Blackberry Swirl:
1 cup fresh blackberries (or blackberry puree)
1/4 cup granulated sugar
1 tbsp lemon juice
For the Frosting:
1/2 cup unsalted butter (softened)
3 cups powdered sugar
1 tsp vanilla extract
2-4 tbsp milk
Instructions
Preheat Oven: To 350°F (175°C) and grease a 9×13-inch baking pan.
Make Cake Batter: In a bowl, cream butter and sugar. Add eggs, milk, vanilla, flour, baking powder, lavender, and salt. Mix until smooth.
Prepare Blackberry Swirl: In a saucepan, cook blackberries, sugar, and lemon juice until thickened. Let cool.
Assemble Cake: Pour batter into the prepared pan. Drop spoonfuls of blackberry mixture on top and swirl with a knife.
Bake: For 30-35 minutes until a toothpick comes out clean. Let cool completely.
Make Frosting: Beat butter, powdered sugar, vanilla, and milk until smooth.
Frost Cake: Spread frosting over cooled cake and garnish with additional blackberries and lavender if desired.
