Ingredients:
For the Satay:
1 lb chicken thighs or beef, cut into bite-sized pieces
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon sweet soy sauce (kecap manis)
1 teaspoon ground coriander
1 teaspoon turmeric powder
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon vegetable oil
Bamboo skewers (soaked in water for 30 minutes)
For the Peanut Sauce:
½ cup roasted peanuts (or peanut butter)
1 tablespoon sweet soy sauce (kecap manis)
1 teaspoon soy sauce
1 teaspoon chili paste (optional for heat)
1 teaspoon lime juice
1 clove garlic, minced
½ cup coconut milk
¼ cup water (adjust for consistency)
Directions:
In a bowl, mix garlic, soy sauce, sweet soy sauce, coriander, turmeric, salt, black pepper, and vegetable oil. Add the chicken or beef pieces and marinate for at least 1 hour (or overnight for deeper flavor).
Thread the marinated meat onto skewers.
Heat a grill or grill pan to medium-high heat. Grill the skewers for 3-4 minutes per side, basting with extra marinade, until fully cooked and slightly charred.
While grilling, prepare the peanut sauce: Blend or mix peanuts (or peanut butter) with sweet soy sauce, soy sauce, chili paste, lime juice, garlic, coconut milk, and water until smooth. Simmer for 3-5 minutes until slightly thickened.
Serve the satay skewers hot with peanut sauce on the side. Garnish with fresh cilantro and lime wedges if desired.
