White Chocolate Raspberry Cheesecake Balls

Ingredients:
1. 1 ½ cups graham cracker crumbs
2. 1 ½ cups cream cheese, softened
3. ½ cup powdered sugar
4. 1 teaspoon vanilla extract
5. ½ cup fresh raspberries, mashed
6. ½ cup white chocolate chips, melted

Directions:
Prepare the Cheesecake Balls:
1. In a big bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
2. Gently add the graham cracker crumbs and mashed fresh raspberries, mix well.
3. Chill the mixture in the fridge for 30 minutes to firm up.

Shape the Balls:
4. After chilling, scoop a tablespoon of the mixture and roll it into a ball. Place on a tray lined with parchment paper.
5. Continue shaping until all the cheesecake balls are made. Chill for 1 hour.

Coat the Cheesecake Balls:
6. Melt the white chocolate chips in the microwave in short intervals until smooth.
7. Dip each chilled cheesecake ball into the melted white chocolate, ensuring it’s fully coated. Place back on the tray.
8. While the chocolate is soft, sprinkle crushed freeze-dried raspberries on top of each ball.

Chill and Serve:
9. Put the coated balls back in the fridge for at least 30 minutes to set.
10. Once the coating is firm, your White Chocolate Raspberry Cheesecake Balls are ready to enjoy!
