Grilled Chicken and Veggie Bowl Recipe

Grilled chicken and veggies are always a winner, especially when everything comes together with a perfect sear and vibrant greens.

Prep Time: 10 minutes

Cook Time: 15 minutes 

Total Time: 25 minutes

Servings: 4

Ingredients:

2 chicken breasts, cubed

1 zucchini, sliced

1 cup broccoli florets

1 cup green beans, trimmed

1/2 red onion, chopped

1 cup cabbage, shredded

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon fresh parsley, chopped

Instructions:

1. prepare the ingredients:  

Cube the chicken breasts and slice the vegetables. Place them in separate bowls.

2. season the chicken:  

In a bowl, mix the chicken with 1 tablespoon olive oil, garlic powder, paprika, salt, and pepper.

3. cook the chicken:  

Heat a large skillet or grill pan over medium heat. Add the chicken and cook for 5–7 minutes, flipping occasionally, until golden brown and fully cooked. Remove and set aside.

4. saute the vegetables:  

In the same pan, add the remaining olive oil. Add zucchini, broccoli, green beans, red onion, and cabbage. Season with salt and pepper. Sauté for 5–7 minutes until slightly charred and tender.

5. combine and serve:  

Add the cooked chicken back to the pan and toss to combine. Garnish with fresh parsley and serve hot.
