Ingredients:
2 large sweet onions, thinly sliced
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika (optional, for a smoky flavor)
1 large egg
3/4 cup milk
Vegetable oil for frying
Instructions:
Prepare the Onions:
Thinly slice the sweet onions and set them aside.
Make the Batter:
In a mixing bowl, whisk together flour, baking powder, salt, pepper, and paprika (if using).
In a separate bowl, whisk the egg and milk together.
Pour the wet ingredients into the dry ingredients and stir until combined. The batter should be thick but slightly pourable.
Fry the Fritters:
Heat vegetable oil in a deep
pan over medium heat.
Once the oil is hot, carefully dip the onion slices into the batter, coating them evenly. Fry in batches, being careful not to overcrowd the pan.
Fry for about 3-4 minutes on each side or until golden brown and crispy.
Drain and Serve:
Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve warm, ideally with sour cream, a green salad, or baked beans.
