Banana Bread Cake with Cream Cheese Frosting
Ingredients:
– 1/2 cup (1 stick) butter, softened
– 1½ cups granulated sugar
– 2 large eggs
– 1 cup sour cream (full-fat is best)
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– ¼ teaspoon salt
– 1 cup mashed bananas (about 3 bananas)
– 1/2 cup (1 stick) butter, softened
– 1 bar (8 oz) cream cheese (full-fat is best)
– 1 teaspoon vanilla extract
– 3 cups powdered sugar
– 2 tablespoons heavy whipping cream
Directions:
1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish.
2. In a large bowl, mix the butter and sugar until creamy. Add eggs, sour cream, and vanilla extract, and mix well.
3. Slowly add the flour, baking soda, and salt. Stir in the mashed bananas until just mixed.
4. Pour the batter into the prepared baking dish and smooth the top.
5. Bake for 25-35 minutes until a toothpick inserted in the center comes out clean. Let the cake cool completely.
6. For the frosting, beat the butter and cream cheese until smooth. Add vanilla extract, powdered sugar, and heavy cream, and beat until creamy.
7. Spread the frosting over the cooled cake. Slice and enjoy!
