1 lb chicken breasts, sliced into thin cutlets
1 cup all-purpose flour
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
2 large eggs, beaten
1 cup panko breadcrumbs
Vegetable oil (for frying)
For the Bang Bang Sauce:
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tbsp sriracha (adjust to taste)
1 tbsp honey
For Assembly:
4 hamburger buns
Lettuce leaves
Tomato slices
Pickles (optional)
Directions:
Prepare Chicken: In a shallow dish, combine flour, paprika, garlic powder, onion powder, salt, and pepper. In another dish, place the beaten eggs. In a third dish, add panko breadcrumbs.
Dredge Chicken: Coat each chicken cutlet first in the flour mixture, then dip in beaten eggs, and finally coat with panko breadcrumbs.
Fry Chicken: Heat vegetable oil in a large skillet over medium heat. Fry the chicken cutlets until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
Make Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
Assemble Sandwiches: Spread a generous amount of Bang Bang sauce on the bottom half of each bun. Top with a fried chicken cutlet, lettuce, tomato slices, and pickles if desired. Cover with the top bun.
