Cabbage Roll Soup Recipe
Ingredients
1 pound ground beef or ground pork (or a mix)
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
4 cups cabbage, chopped
2 medium carrots, peeled and diced
1 cup white rice, uncooked
6 cups beef or chicken broth
1 (14.5-ounce) can diced tomatoes
1 (8-ounce) can tomato sauce
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and black pepper, to taste
Optional: fresh parsley for garnish
Instructions
Cook the Ground Meat:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or pork and cook until browned, breaking it apart with a spoon. Drain any excess fat and set aside.
Sauté Aromatics:
In the same pot, add the onion and garlic. Cook until softened, about 3-4 minutes.
