Ingredients:
1 lb ground beef or sausage (or a mix)
1 medium onion, diced
1 bell pepper, diced (green or red)
3 cloves garlic, minced
1 medium head of cabbage, chopped
1 (14.5 oz) can diced tomatoes
1 cup cooked white rice
1 cup chicken broth
1 tbsp Cajun seasoning
1/2 tsp smoked paprika
1/2 tsp thyme
Salt and pepper to taste
2 tbsp olive oil
Optional: hot sauce, for serving
Directions:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add ground beef or sausage and cook until browned, breaking it apart with a spatula. Remove the meat from the skillet and set aside.
In the same skillet, add the diced onion and bell pepper. Sauté for 3-5 minutes, or until softened. Stir in the garlic and cook for another minute.
Add the chopped cabbage to the skillet and cook for 5-7 minutes, stirring occasionally, until it begins to soften.
Return the cooked meat to the skillet. Stir in the diced tomatoes (with their juice), cooked rice, and chicken broth. Mix well.
Sprinkle in the Cajun seasoning, smoked paprika, thyme, salt, and pepper. Adjust seasonings to taste. Cover and simmer over low heat for 15-20 minutes, stirring occasionally, until the cabbage is tender and the flavors are well combined.
Serve hot, optionally drizzled with your favorite hot sauce for an extra kick.
