1 lb boneless, skinless chicken breasts or thighs
1 lb andouille sausage, sliced
1 tablespoon olive oil
1 teaspoon Cajun seasoning
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Creamy Cilantro Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped cilantro
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional)
For the Bowls:
2 cups cooked rice
Lime wedges, for serving
Instructions:
Prepare the Chicken & Sausage: In a large bowl, combine the chicken and sausage with the olive oil, Cajun seasoning, garlic powder, salt, and pepper. Toss to coat.
Cook the Chicken & Sausage: Grill or pan-fry the chicken and sausage until cooked through and slightly charred, about 5-7 minutes per side. Let the chicken and sausage rest for a few minutes before slicing.
Make the Creamy Cilantro Sauce: In a small bowl, whisk together the mayonnaise, sour cream, cilantro, lime juice, chili powder, cumin, garlic powder, salt, pepper, and cayenne pepper (if using).
Assemble the Bowls: Divide the rice between two bowls. Top with the sliced chicken, sausage, and drizzle with the Creamy Cilantro Sauce. Serve with lime wedges.
Tips:
For a spicier dish, add more Cajun seasoning and cayenne pepper.
You can use any type of cooked rice you like, such as brown rice or quinoa.
