Cheesy Mashed Potato Puffs Recipe

Ingredients:

2 cups mashed potatoes (preferably leftover or freshly made)
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
2 large eggs
1/4 cup chopped green onions (optional)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and freshly ground black pepper to taste
2 tablespoons melted butter
Fresh parsley for garnish (optional)
Directions:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan, breadcrumbs, eggs, garlic powder, onion powder, and chopped green onions (if using). Stir until all ingredients are well mixed.
Season the mixture with salt and black pepper to taste.
Using a spoon or your hands, form the mixture into small balls or puffs, about 1 to 1.5 inches in diameter, and place them onto the prepared baking sheet.
Brush the tops of the puffs with melted butter to help them crisp up during baking.
Bake in the preheated oven for 18-20 minutes, or until the puffs are golden brown and crispy on the outside.
Once baked, remove from the oven and let cool slightly. Garnish with fresh parsley, if desired.
