  • 1.5 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 pound egg noodles
  • 1/4 cup butter
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
Instructions:
  • Season chicken: Season the chicken breasts with salt and pepper on both sides.
  • Cook chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Cook noodles: Cook the egg noodles according to package directions. Drain well and set aside.
  • Make buttered noodles: In the same skillet, melt the butter over medium heat. Add the cooked noodles and toss to coat in the butter.
  • Add Parmesan & parsley: Stir in the Parmesan cheese and fresh parsley until well combined.
  • Slice chicken: Slice the cooked chicken into strips and place on top of the buttered noodles.
