Chocolate Crunch Brownie Bars
Ingredients:
– 1 cup butter, melted
– 1 1/4 cups sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 3/4 cup all-purpose flour
– 1/2 cup cocoa powder
– 1/2 teaspoon salt
– 1/2 teaspoon baking powder
– 1 cup chopped walnuts
– 1 1/2 cups milk chocolate chips, divided
– 1 cup crispy rice cereal
– 3/4 cup creamy peanut butter
Directions:
1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
2. In a mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, whisking until well combined.
3. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
4. Fold in the chopped walnuts and pour the batter into the prepared baking pan. Spread evenly.
5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely.
6. In a microwave-safe bowl, melt 1 cup of chocolate chips and peanut butter together in 20-second intervals, stirring in between until smooth. Stir in the crispy rice cereal.
7. Spread the chocolate mixture evenly over the cooled brownies. Sprinkle the remaining chocolate chips on top.
8. Refrigerate for about 1 hour, or until the topping is set.
9. Cut into squares and enjoy!
