Classic Meatballs with Mashed Potatoes & Buttered Veggies
A hearty, comforting meal that’s perfect for any day! Ingredients:
For the Meatballs:
1 lb ground beef (or a mix of beef & pork)
1/2 cup breadcrumbs
1 egg
1/4 cup milk
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried parsley
1 tbsp olive oil (for frying)
For the Mashed Potatoes:
4 large russet potatoes, peeled & cubed
1/2 cup heavy cream
4 tbsp butter
1/2 tsp salt
1/2 tsp black pepper
For the Brown Gravy:
2 cups beef broth
2 tbsp butter
2 tbsp flour
1/2 tsp Worcestershire sauce
1/2 tsp black pepper
For the Buttered Vegetables:
2 cups baby carrots
1 cup peas
1 tbsp butter
1/2 tsp salt
1/2 tsp black pepper Step by Step:
Make the Meatballs:
In a bowl, mix ground beef, breadcrumbs, egg, milk, salt, pepper, garlic powder, onion powder, and parsley.
Roll into small meatballs.
Heat olive oil in a pan over medium heat and cook for 10-12 minutes, turning occasionally until browned and cooked through. Prepare the Mashed Potatoes:
Boil cubed potatoes in salted water for 15-20 minutes until soft.
Drain and mash with heavy cream, butter, salt, and black pepper. Cook the Brown Gravy:
In a saucepan, melt butter over medium heat.
Stir in flour and cook for 1-2 minutes until golden.
Gradually whisk in beef broth and Worcestershire sauce.
Simmer for 5 minutes until thickened. Sauté the Vegetables:
Steam or boil carrots for 5 minutes until tender.
Add peas, butter, salt, and black pepper, sautéing for 2 more minutes. Assemble & Serve:
Plate mashed potatoes, meatballs, and buttered veggies.
Drizzle with brown gravy and enjoy!
