Creamy Cajun Chicken Pasta
Ingredients:
1 lb chicken breast, sliced into thin strips
2 tbsp Cajun seasoning
2 tbsp olive oil
12 oz pasta (fettuccine, penne, or your favorite)
2 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
1 cup diced tomatoes (fresh or canned, drained)
1 cup bell peppers, sliced (red, yellow, or green)
1/2 cup onions, sliced
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Cook the chicken: Season the chicken strips with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and fully cooked (about 5-6 minutes). Remove and set aside.
Cook the pasta: Boil pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
Sauté the veggies: In the same skillet, melt butter over medium heat. Add garlic, bell peppers, and onions, and sauté until softened (about 3-4 minutes).
Make the sauce: Stir in the heavy cream, chicken broth, and Parmesan cheese. Bring to a gentle simmer, stirring until the sauce thickens slightly (about 3-4 minutes).
Combine everything: Add the cooked chicken, pasta, and diced tomatoes to the skillet. Toss everything together until well coated in the creamy sauce. Add reserved pasta water a little at a time if the sauce is too thick.
Serve: Garnish with fresh parsley and extra Parmesan cheese if desired. Serve hot and enjoy!
