Creamy Cajun Shrimp and Chicken Pasta
Ingredients:
8 ounces fettuccine or pasta of choice
1 tablespoon olive oil
1 pound shrimp, peeled and deveined
1 pound chicken breast, sliced
1 tablespoon Cajun seasoning
1 cup heavy cream
1 cup chicken broth
1 cup bell peppers, sliced (red, yellow, or green)
1/2 cup onion, chopped
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley, chopped for garnish
Grated Parmesan cheese for serving
Directions:
Begin by cooking the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken breast and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the shrimp and cook for 2-3 minutes until they turn pink. Remove the shrimp and set aside with the chicken.
In the same skillet, add the chopped onion, bell peppers, and garlic. Sauté until the vegetables are tender, about 3-4 minutes.
Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for a few minutes until it thickens slightly.
Return the cooked chicken and shrimp to the skillet, mixing well to coat them in the creamy sauce. Add the cooked pasta to the skillet and toss everything together until well combined.
Serve hot, garnished with fresh parsley and grated Parmesan cheese.
