Creamy Homemade Butterscotch Pie

Ingredients:

For the Filling:
1 cup packed dark brown sugar
ΒΌ cup cornstarch
Β½ teaspoon salt
3 cups whole milk
4 large egg yolks
4 tablespoons unsalted butter
1 tablespoon pure vanilla extract
For the Crust & Topping:
1 pre-baked 9-inch pie crust
Whipped cream (for topping)
Butterscotch chips or shavings (for garnish)

Instructions:

Step 1: Prepare the Butterscotch Filling
In a medium saucepan, whisk together the brown sugar, cornstarch, and salt.
Gradually whisk in the milk, ensuring there are no lumps.
Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble.
Step 2: Temper the Egg Yolks
In a separate bowl, whisk the egg yolks.
Slowly add a few spoonfuls of the hot mixture into the yolks while whisking continuously to prevent scrambling.
Pour the egg mixture back into the saucepan and cook for 2 more minutes, stirring constantly.
Step 3: Add Butter & Vanilla
Remove from heat and stir in the butter and vanilla extract until fully combined and smooth.
Step 4: Assemble & Chill
Pour the butterscotch filling into the pre-baked pie crust.
Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Chill for at least 4 hours, or until fully set.
Step 5: Garnish & Serve
Top with whipped cream and butterscotch chips or shavings before serving.
