Creamy Ranch Beef and Roasted Sweet Corn Rotini Skillet
**Ingredients:**
– 12 oz rotini pasta
– 1 lb ground beef
– 1 1/2 cups roasted sweet corn
– 1 packet ranch seasoning mix
– 1 cup sour cream
– 1/2 cup heavy cream
– 1 cup shredded cheddar cheese
– 2 tbsp butter
– 1/2 tsp smoked paprika
**Instructions:**
1. **Cook Pasta:**
– Boil rotini pasta until al dente. Drain and set aside.
2. **Cook Beef:**
– In a large skillet, cook ground beef until browned. Drain excess fat and stir in ranch seasoning.
3. **Prepare Sauce:**
– Add butter, sour cream, heavy cream, and paprika to the skillet. Stir until smooth.
4. **Combine:**
– Fold in pasta, roasted sweet corn, and cheddar cheese. Stir until well combined.
5. **Serve:**
– Serve warm, garnished with extra cheese if desired.
