Crispy Chicken Alfredo

Ingredients:

2 chicken breasts

1 cup breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp black pepper

½ tsp salt

1 egg, beaten

½ cup flour

2 tbsp olive oil

250g fettuccine pasta

2 cups heavy cream

1 cup Parmesan cheese (for sauce)

2 tbsp butter

2 cloves garlic, minced

½ tsp black pepper

1 tbsp chopped chives (for garnish)

Instructions:
Cook pasta according to package instructions, drain, and set aside. Pound chicken breasts to an even thickness. Season with salt and black pepper. Coat each chicken breast in flour, dip in beaten egg, then coat with a breadcrumb and Parmesan mixture. Heat olive oil in a skillet over medium heat and cook chicken for 4-5 minutes per side until golden and crispy. Remove and let rest before slicing. In the same skillet, melt butter, add minced garlic, and cook for 1 minute. Pour in heavy cream, black pepper, and Parmesan cheese, stirring until smooth. Add cooked pasta to the sauce and toss to coat. Serve with sliced crispy chicken on top, garnished with chopped chives.
