Ingredients:
For the Onion Rings:
1 large onion, sliced into 1/2-inch rings
1 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 egg, beaten
1/4 cup milk
Vegetable oil for frying
For the Spicy Avocado Dip:
1 ripe avocado
1/4 cup mayonnaise
1 tablespoon lime juice
1/2 teaspoon sriracha (or more to taste)
1/4 teaspoon cumin
Salt and pepper to taste
Instructions:
Prepare the Onions: In a shallow dish, combine the flour, garlic powder, onion powder, salt, pepper, and paprika. In another shallow dish, whisk together the egg and milk.
Coat the Onions: Dip each onion ring into the egg mixture, then dredge in the flour mixture, ensuring they are well coated.
Fry the Onion Rings: Heat about 1 inch of vegetable oil in a deep pot to 350°F (175°C). Carefully add the onion rings to the hot oil and fry in batches for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels.
Make the Spicy Avocado Dip: In a bowl, mash the avocado with a fork. Add the mayonnaise, lime juice, sriracha, cumin, salt, and pepper. Stir until smooth and creamy.
Serve: Serve the crispy onion rings with the spicy avocado dip.
Tips:
Adjust the amount of sriracha to your desired level of heat.
For extra crunch, add panko bread crumbs to the flour mixture.
