Crockpot Ham and Potato Casserole

Ingredients:
4 cups diced potatoes
2 cups diced ham
1 small onion, finely chopped
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1 cup milk
1/2 cup sour cream
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 cup chopped fresh parsley (optional, for garnish)
Directions:
Prepare the Ingredients:
In a large bowl, combine diced potatoes, diced ham, and chopped onion.
Mix the Sauce:
In another bowl, mix together the cream of mushroom soup, shredded cheddar cheese, milk, sour cream, minced garlic, salt, pepper, and paprika until well combined.
Assemble the Casserole:
Spray the inside of your crockpot with non-stick cooking spray.
Add half of the potato and ham mixture to the bottom of the crockpot. Pour half of the sauce over it.
Repeat with the remaining potatoes, ham, and sauce.
Cook:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender and casserole is bubbly.
Serve:
Stir gently before serving and garnish with chopped fresh parsley if desired. Enjoy this hearty meal!
