Cucumber Tomato Salad

Ingredients
2 large cucumbers, thinly sliced
1 pint cherry or grape tomatoes, halved
1 small red onion, diced
1/4 cup fresh parsley, chopped
For the vinaigrette:
2 tbsp fresh lemon juice (or red wine vinegar)
3 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 clove garlic, minced (optional)
1 tsp honey or sugar (optional, for sweetness)
Directions
Prepare the vegetables:
Slice the cucumbers, halve the cherry tomatoes, dice the red onion, and chop the parsley.
Make the vinaigrette:
In a small bowl, whisk together lemon juice (or vinegar), olive oil, salt, pepper, and optional garlic and honey.
Assemble the salad:
Combine the cucumbers, tomatoes, red onion, and parsley in a large bowl.
Pour the vinaigrette over the vegetables and toss gently to combine.
