Decadent Chocolate Cherry Cupcakes
Ingredients:
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 cups granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 large eggs
1 cup buttermilk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup cherry pie filling
Whipped cream and chocolate shavings (for garnish)
Instructions:
Start by preheating your oven to 350°F (175°C). In a mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix well to ensure there are no lumps.
In another bowl, whisk together the eggs, buttermilk, oil, and vanilla extract until smooth. Gradually add this mixture to the dry ingredients, stirring until everything is well combined. Fold in the cherry pie filling until evenly distributed.
Line a muffin tin with paper liners. Spoon the batter into the liners, filling each about two-thirds full. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely before proceeding.
For the frosting, beat the whipped cream until stiff peaks form. Spread a generous dollop of whipped cream on top of each cooled cupcake. Drizzle melted chocolate over the whipped cream and garnish with chocolate shavings.
